Tomato, Onion Salmon Bake

Marinade for Salmon

2 LBS skinless salmon fillets
Salt
Pepper
1 clove garlic crushed
2 tbs dijon mustard
1 tsp italian her blend
1/4 cup olive oil

Tomato Onion Layer

2 Tbs olive oil
1 1/2 LB sweet onions thick sliced
1 Tbs sugar
2 14 1/2 OZ can diced tomatoes, drained
salt & pepper

Mayonnaise Spread

1 1/2 cup mayonnaise
3 cloves minced garlic
3/4 cup grated Parmesan cheese
black pepper

Preheat oven to 350. Spray 11 x 8 inch baking dish with oil. Remove bones from Salmon. Season Salmon fillets with salt and pepper. Mix garlic, mustard, herbs and oil in large bowl. Place Salmon in marinade for 30 minutes.

In a large skillet heat oil over medium heat. Add onions and sugar and mix. Reduce heat and simmer till the onions turn golden brown. About 10 minutes. Add drained tomatoes and salt and pepper to taste. Remove from heat.

In a small bowl mix the mayonnaise ingredients until smooth.

Place Salmon in prepared baking dish. Cover with tomato mixture. Spread the mayonnaise mixture over the tomato layer. Bake for 30 minutes until bubbly and light brown.

Serves about 8.
